VINEYARD AND WINE MAKING The grapes were hand picked in early March 2004 before being delivered to the Hanging Rock Winery near the Macedon Ranges for crushing. The Chardonnay was fermented in 1 year old steam bent American and French Oak barriques with a total oaking period of nine months. The wine under went a secondary ferment of Malo lactic fermentation TASTING NOTES The nose display’s vibrant yet smooth vanilla tones interlaced with citrus notes of lime and tangerine. Skillful use of French and American oak by master wine maker John Ellis of Hanging Rock Winery has created a wine that has a full body that is creamy in flavour and texture. Flavours of melon, citrus lemon, tangerine combine with the smooth vanilla taste which have resulted from yeast lees and oak.
